We’ve partnered with our long-time friends at pFriem Family Brewers and FINEX Cast Iron to proudly present a delicious classic recipe that unites our three Oregon brands: Flemish Stew.
Created by the culinary team at pFriem Family Brewers in Hood River, Oregon, this Flemish Stew exemplifies pFriem’s remarkable ability to elevate classic beer styles to the pinnacle of their representation. With their meticulous attention to detail and unwavering dedication, pFriem embraces the art of brewing, infusing each creation with depth, complexity, and an unmistakable touch of Oregon craftsmanship. This Flemish Stew recipe showcases their ability to take a traditional style and transform it into an extraordinary culinary experience.
This brisket stew features the richness of pFriem’s Belgian Strong Dark ale (Aromas of fig, stewed cherries, and a touch of clove, with full, rich, creamy flavors of ripe bananas, chocolate covered figs, and ripe plums fill the mouth), further enhanced by a low and slow cook in a FINEX cast iron Dutch Oven.
For the ultimate precision and finesse in preparation, their chefs use the STEELPORT 8” Chef knife. It effortlessly glides through each ingredient, ensuring even, clean cuts that show appropriate care for each thoughtfully sourced ingredient.

Pfreim Flemish Stew
Ingredients
- 5 lb Brisket, cleaned and cut into 1/3” x 2” strips
- 1.5 qt Onions, julienned
- ¼ lb Bacon Fat
- 1 cup AP Flour
- 2 Bottles Belgium Strong Dark
- 2 Tb Thyme, fresh
- 2 Tb Bay leaf
- 2 Tb salt
- 2 Tb Apple Cider vinegar
- 2 Tb Brown Sugar
- Salt and Pepper
Process
- Clean and cut brisket use a sharp knife, like a STEELPORT 8” Chef Knife, 6” Chef Knife or 10” Slicing Knife.
- Julienned your onions and prepare and organize remaining components.
- Heat a FINEX Dutch Oven (5qt or 7qt) on the stovetop and working in batches, season and sear beef strips over medium-high heat until deeply caramelized. Don’t overcrowd the meat. Remove meat from pan and reserve.
- Using the same Dutch Oven, sauté onion in bacon fat until caramel in color. Then add in flour, continue cooking until well combined and a roux is formed.
- Add the beef, beer, thyme, bay leaf and salt to the Dutch Oven, combine well.
- Cover and cook over low heat on the stovetop for 2.5 hours or until the beef is very tender. Stir well to incorporate roux. Alternatively, braise in the oven at 275 degrees for the same length of time.
- Stir in the vinegar, sugar, salt and pepper to taste.
- Serve hot, garnished with fresh herbs, alongside favorite crusty bread, sliced with a STEELPORT Bread Knife.
